Cellar Insights addresses a largely overlooked source of agricultural loss: post-harvest spoilage in potato storage, which accounts for 5–25% of crop value globally. The company’s system of sensors and cloud-based AI algorithms monitors temperature, humidity, CO₂, and trace rot gases inside storage facilities, detecting early decomposition weeks before visual signs appear and enabling timely interventions. Founded by sixth-generation potato grower Ross Culberson and tech veteran Terry Sydoryk, and launched through the Carrot Ventures / AVAC Group ecosystem, the platform currently monitors over 150 million pounds of stored potatoes for farmers and processors across North America. An oversubscribed seed round co-led by Tall Grass Ventures and Accelerate Fund IV, with participation from Carrot Ventures and industry veterans connected to McCain’s, is funding AI enhancements and further commercial expansion.
