While total deal value rose slightly in 2024, that growth was concentrated in a handful of large late-stage rounds. Despite this conservatism, several areas have continued to grow. Fermentation-based proteins are also showing signs of renewed momentum after a difficult funding period in 2022–2023. From novel proteins and fats to healthier formulations, AI is helping companies identify and test new ingredients faster than ever before. This innovation is especially critical as new regulations push the industry to phase out harmful additives and dyes in favor of more health-conscious, sustainable alternatives. 

Additionally, AI is improving post-harvest processes that were once manual and labor-intensive. Automated sorting systems, for example, are helping ensure higher-quality produce reaches retailers, reducing waste and enhancing food consistency and safety.

Hydration-focused products and women’s health solutions are gaining mainstream traction, while stress management innovations (e.g., magnesium- and theanine-based products) continue to emerge. At the same time, sustainable packaging, particularly edible films, is beginning to rise, though still in early stages. Venture capital funding, Neville observes, is tightening as investors prioritize profitability over growth at all costs. While fermentation-based alt-proteins show signs of maturation, scalability challenges persist, especially within capital-intensive meat replacement segments. 

Looking further ahead, Neville envisions a major acceleration in these trends over the next five years. The 4Ps framework will become mainstream, with participatory health—biohacking, self-testing, and personalized nutrition—driving consumer engagement. Nutrients and functional foods will increasingly require evidence-backed claims to meet the expectations of Gen X and Millennial consumers, pushing mainstream CPG brands to acquire emerging health-focused brands at a faster pace. Longevity and healthspan-focused products, as well as innovations in microbiome optimization, will surge alongside new tools for real-time health tracking. In parallel, alternative proteins are expected to rebound due to pressures on traditional seafood and livestock supplies, with climate and political factors accelerating the shift toward sustainable protein alternatives. The decline of heavily processed foods will open new opportunities for cleaner, locally grown options. AI’s influence on FoodTech will continue to deepen, with the market for AI applications in food predicted to grow at a 37% CAGR through 2034. Innovations in packaging, particularly edible packaging, are also expected to scale significantly. Ultimately, Neville predicts that food security will be treated as critical national infrastructure, creating new investment opportunities at the intersection of FoodTech, policy, and sovereign wealth strategies.

Despite tighter capital markets, FoodTech remains a space of rich opportunity—especially for startups and technologies that align with shifting consumer expectations and the broader sustainability agenda. 

Personalized nutrition is regaining momentum, driven by demand for more tailored, health-forward food solutions. Advances in AI and health data integration are enabling a new generation of platforms that offer individualized product recommendations, meal planning, and functional foods that support metabolic, digestive, or cognitive health. 

Meanwhile, fermentation and plant-based proteins continue to attract attention, not just for their environmental promise but for their improving cost structures and commercialization strategies. These segments are showing signs of maturation, with more focus on functionality, taste, and scalability than the earlier wave of alternative protein enthusiasm. 

Finally, AI is emerging as a core capability for FoodTech companies—no longer a bonus feature, but a foundational technology. Changing consumption patterns and regulatory demands are reshaping what we grow—beginning with plant and seed traits. AI now enables analysis of this data at unprecedented scale, driving smarter decisions from the ground up. Whether it’s enhancing product R&D, optimizing supply chains, or creating deeper consumer insights, AI is helping to unlock new efficiencies and differentiate offerings in a crowded market.
